Is there anything better than easy one pot soup recipes? Off the top of my head there aren’t many things which come to mind. When you can pair the words comfort food or hearty soup with one pot … sign me up!
Some nights you don’t have the time or desire to slave away in the kitchen over a meal and then have to muster up the energy to wash all of the dishes left over in the sink.
This is one of my families favorite soups and I make it all of the time. 30 minutes or less and it’s in my weekly rotation!

These ingredients are so simple, easy and usually items I readily have on hand. It does not take a lot of preparation to enjoy this tomato soup. Best of all, with my busy life I can dump everything into the one pot and set the timer without the worry of juggling different ingredients in multiple pots on the stove.
Everyone I’ve made this for asks for the recipe because it really is a soul warming bowl of goodness and I know you’ll love it too! All I have to say is easy one pot soup recipes and my friends basically hound me for the secrets.

One Pot Creamy Tomato Tortellini Soup

- 2 teaspoon olive oil
- 4 garlic cloves, diced
- 1 medium yellow (sweet) onion, diced
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 6 fresh basil leaves OR 2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 29 ounce can tomato sauce
- 28 ounce can diced tomatoes
- 32 ounce carton of chicken stock
- 1/2 cup heavy cream
- 20 ounces cheese filled tortellini
- 1 cup fresh spinach leaves
- 1/4 cup shredded Parmesan cheese for garnish
Instructions
- Place the olive oil, garlic, onion, and rosemary into a 6 quart pot. Saute over medium heat for 8-10 minutes or the onions are translucent.
- Add the oregano, basil, salt, pepper, tomato sauce, diced tomatoes with juice, chicken stock and heavy cream. Stir to combine all ingredients.
- Simmer uncovered for 20 minutes.
- Place the cheese tortellini into the soup and cook for 10 minutes.
- Add the spinach leaves and stir into soup. Cook for additional 5 minutes or until tortellini are tender and cooked all the way through.
- Serve and garnish with shredded Parmesan cheese and chopped fresh basil.
Notes
Be mindful of how long the tortellini sit fully cooked in soup before serving – as to not over cook the tortellini and make them mushy.
